Objective
The ANAEROBANK project aims to provide companies in the Valencian Community with new biological resources to obtain functional foods with an improved nutritional profile. In addition, biological resources with fermentative capacities will also be provided, enabling the identification of new potential applications in food matrices from collaborating companies. For this reason, the project includes profiles of different kinds.
