Objective
The objective of BOILÀ II is to continue the research carried out in the BOILÀ project, focused on investigating new technological pathways for the sustainable generation of new fat structures. In this second year of the project, the aim is to further explore different technological strategies: advanced extraction processes capable of recovering oleosomes from plant material, enzymatic interesterification processes to generate new plant-based fat structures, the scale-up of the precision fermentation process for the production of Single Cell Oils, and thecultivation of olive cells (Olea europaea) to obtain plant-based fats.
