Additives are substances added to food for technological purposes (to improve appearance, texture, resistance to microorganisms, etc.) at different stages of manufacturing, transport or storage.
All additives used in the EU must be evaluated and authorised. To do so, they must demonstrate that they are safe at the levels used, that they are necessary for the foods in which they are authorised, and that they do not mislead consumers. Additives must be included in the food composition table, indicating their function in the product. They can be listed either by name or by their E number, which is the code under which they are authorised in the European Union.
