High external and internal factors affecting the industry make it increasingly complex to guarantee 100% food safety.

Despite the implementation of HACCP, cases of contamination or quality alterations continue to occur in the food industry. Throughout the production process, there are multiple influencing factors, such as the origin of raw materials, hygiene protocols and the practices carried out by workers, among others. Added to this are the difficulty of modelling processes and the limited or non-existent use of historical production data, which contains large amounts of information.

Faced with this combination of challenges, risks or contamination can easily appear in products.

We analyse the process and product, as well as the data and information systems available in a company; based on this information, we develop behavioural models of the production process and products. In addition, we define mixed models in which we take into account how process variables affect the product and vice versa.

For the specific characteristics of each company, we generate diagnostic algorithms that allow us to identify causes and effects in the production process, predictive algorithms for product quality and safety, and algorithms for simulating possible production scenarios.

We integrate these algorithms and models into a single system which, in turn integrated into the company’s existing systems, enables risk prediction and management in the field of food safety.
