Vitafoods Europe

Vitafoods is one of Europe’s leading nutraceutical trade fairs, aimed at nutrition professionals across all stages, from ingredient development to services and equipment, including finished product creation and manufacturing. The previous edition welcomed more than 25,000 attendees from 120 countries worldwide.

This year, the fair focuses on quality raw ingredients, healthy dietary supplements and functional foods and beverages, offering attendees a space to explore the latest sector trends and build professional connections with leading suppliers and participants.

In addition to talks and round tables on key topics, the fair offers both online and in-person networking spaces. New this year are healthy breakfasts, a 5K run in Geneva taking place on Wednesday 11, and a Wellness Challenge, where all attendees, whether in person or online, can accumulate steps to win prizes.

The need to evolve our agri-food system towards a more sustainable model with lower environmental impact, together with the availability of new technologies at increasingly competitive costs, has become a key driver of innovation in the food sector.
This is combined with the sector’s intrinsic characteristics, focused on offering high-quality, safe and healthy products to consumers, as well as the growing social demand for more sustainable products and alternatives to animal-based products.

As a result, we are seeing innovation trends that include plant-based or biotechnology-based alternatives to dairy and meat products. Increasingly advanced in vitro models are reducing the need for animal testing. These trends respond to current social and environmental challenges.
In addition, digital technologies have revolutionised the way food is produced, enhancing benefits for both human health and the planet.

Today, consumers are concerned not only about food quality, but also about nutritional value, food safety and sustainability. It is no longer enough to manufacture high-quality food products; they must also be healthy and free from contamination risks caused by toxic substances, pathogens, allergens or foreign matter. Technology has evolved significantly, both in the field of Photonic Technologies and in Computing and Artificial Intelligence, making it possible to carry out controls to identify risks directly on the production line in a very fast and efficient way.
This presentation will provide an overview of the main inspection and control technologies, such as machine vision, spectroscopy, hyperspectral imaging and biosensors, as well as the advantages of using Machine Learning techniques. Real use cases and applications will be presented, showing how it is possible to control the quality and safety of 100% of production.

Digital transformation is becoming a key driver of innovation in the food industry. Technologies such as artificial intelligence, the Internet of Things and big data, among others, are transforming how companies operate within the factory, control product quality and safety, manage the value chain, develop product innovation activities and monitor the market. This presentation will outline key success factors for implementing digital transformation in food companies and will present practical experiences and real case studies.

Sustainable alternatives to meat: mycoproteins and in vitro meat

Currently, the main source of protein is of animal origin, and increasing demand could lead to a 40% rise in meat consumption over the next 20 years. This growing demand highlights the need to ensure the sustainability of the food chain, not only through more efficient processes, but also by identifying new protein sources to support a more competitive, sustainable and inclusive economy (European Strategy 2020). This presentation will explore biotechnological alternatives for protein production, from fungal mycelium-based proteins to in vitro meat, from nutritional, sustainability and industrial feasibility perspectives.

Plant-based products: trends and challenges.

The presentation will also address the need to transform our current agri-food system towards a more sustainable model through the development of new plant-based foods with a lower environmental impact. To this end, the technological areas currently showing the greatest impact and potential will be presented, including extrusion technology and fermentation, both capable of modifying the structural, nutritional and sensory properties of new plant-based ingredients, enabling the development of new food structures with suitable nutritional and sensory characteristics.
The research lines developed by AINIA related to extrusion processes (TVP and HMEC) for the production of meat analogues will also be presented, together with the application of fermentation processes for the development of dairy alternatives from plant-based sources.

Precision nutrition and healthy foods. Scientific evidence.

The presentation will also explore how, following the COVID-19 pandemic, concerns about healthy eating and lifestyles have intensified, creating an opportunity for the industry to develop healthier foods. In this context, one of the main trends for the development of new foods is precision nutrition, a personalised nutrition concept that considers the multidimensional characteristics of individuals or groups in order to promote health. Scientific support is essential and, in this regard, omics technologies as well as in vitro and in vivo studies are of particular relevance.
The research lines developed by AINIA to carry out preclinical studies will also be presented.

Comprehensive view of sustainability in food production.

This presentation will address the main environmental and social impacts associated with food production worldwide. In addition, new EU policies and strategies (Green Deal, Farm to Fork Strategy, Biodiversity Directive, Sustainable Development Goals, etc.) will drive a major shift in improving the environmental, economic and social sustainability of food production chains, positioning Europe as a global leader in the transition towards sustainable production models and promoting circular economy approaches. The speaker will review key R&D&i lines focused on improving the sustainability of food production and consumption. Finally, the principles of Life Cycle Assessment (LCA) methodology for evaluating environmental, economic and social impacts will be presented.
