The presence of residues of pharmacologically active substances and other substances for veterinary use in food is regulated both internationally (Codex Alimentarius) and at European level (through different Directives and Regulations), with specific legislation also existing for other non-EU countries.

Identifying the presence of this type of substance may also serve a technological purpose, as they may interfere chemically or biologically with production processes (e.g. milk fermentation or maturation processes).

In Spain, the National Residue Monitoring Plan (PNIR) is the control instrument for the presence of medicinal residues and their metabolites in live animals and their products.
