Neste sentido, prop\u00f5e-se o desenvolvimento de novos ingredientes, tais como case\u00edna recombinante, mat\u00e9rias-primas vegetais desodorizadas e gorduras estruturadas, cuja aplica\u00e7\u00e3o permita aproximar as caracter\u00edsticas nutricionais, sensoriais e tecnol\u00f3gicas dos produtos de origem animal de refer\u00eancia (leite, iogurte e queijo).<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">\n<h2>Atividades<\/h2>\n<ol>\n<li>Obten\u00e7\u00e3o de novos ingredientes avan\u00e7ados<\/li>\n<li>Processo de desodoriza\u00e7\u00e3o de farinhas vegetais atrav\u00e9s de tecnologia de extra\u00e7\u00e3o supercr\u00edtica<\/li>\n<li>Gera\u00e7\u00e3o de novas estruturas an\u00e1logas l\u00e1cteas<\/li>\n<li>Objetiva\u00e7\u00e3o da perce\u00e7\u00e3o sensorial do produto fermentado mediante a avalia\u00e7\u00e3o molecular do produto e a sua rela\u00e7\u00e3o com as
