Devido \u00e0 sua abund\u00e2ncia intestinal, \u00e9 utilizada como <strong>indicador de contamina\u00e7\u00e3o fecal<\/strong> na \u00e1gua e nos alimentos.\n\nA maioria das estirpes \u00e9 comensal e inofensiva. No entanto, algumas variedades patog\u00e9nicas possuem informa\u00e7\u00e3o gen\u00e9tica que lhes permite:\n<ul>\n \t<li>Produzir toxinas (como as shiga toxinas)<\/li>\n \t<li>Aderir e invadir c\u00e9lulas intestinais<\/li>\n \t<li>Alterar o metabolismo celular<\/li>\n \t<li>Provocar destrui\u00e7\u00e3o tecidular<\/li>\n<\/ul>\nEntre as estirpes de maior relev\u00e2ncia destacam-se as <strong>STEC (Shiga toxin-producing E. coli) e o seu subgrupo EHEC (Enterohemorrhagic E. coli)<\/strong>, especialmente o ser\u00f3tipo O157:H7, associado a diarreia hemorr\u00e1gica e, em casos graves, s\u00edndrome hemol\u00edtico ur\u00e9mico (SHU).\n\nUm aspeto cr\u00edtico do ponto de vista microbiol\u00f3gico \u00e9 a sua capacidade de <strong>troca gen\u00e9tica atrav\u00e9s de plasm\u00eddeos e bacteri\u00f3fagos<\/strong>, o que favorece o aparecimento de novas variantes mais virulentas ou resistentes aos antimicrobianos.\n\nA sua relev\u00e2ncia na seguran\u00e7a alimentar assenta em tr\u00eas fatores-chave:\n<ol>\n \t<li>Baixa dose infeciosa em determinadas estirpes.<\/li>\n \t<li>Elevada capacidade de sobreviv\u00eancia em diferentes matrizes alimentares.<\/li>\n \t<li>Possibilidade de transmiss\u00e3o ao longo de toda a cadeia alimentar.<\/li>\n<\/ol>\n<\/section><section>\n<h2 id=\"principais-vias-de-contaminacao-por-e-coli-nos-alimentos\">Principais vias de contamina\u00e7\u00e3o por E. coli nos alimentos<\/h2>\nA contamina\u00e7\u00e3o por E. coli \u00e9 predominantemente de <strong>origem fecal<\/strong>, tanto humana como animal. As principais vias s\u00e3o:\n<h3><strong>Contamina\u00e7\u00e3o na produ\u00e7\u00e3o prim\u00e1ria<\/strong><\/h3>\n<ul>\n \t<li>Utiliza\u00e7\u00e3o de estrume n\u00e3o tratado.<\/li>\n \t<li>\u00c1gua de rega contaminada.<\/li>\n \t<li>Solos fertilizados com mat\u00e9ria org\u00e2nica insuficientemente compostada.<\/li>\n \t<li>Presen\u00e7a de animais selvagens ou gado em zonas de cultivo.<\/li>\n<\/ul>\n<h3><strong>Contamina\u00e7\u00e3o durante o abate e a ordenha<\/strong><\/h3>\nOs ruminantes, especialmente o gado bovino, s\u00e3o considerados o principal reservat\u00f3rio de STEC e EHEC.
