As suas sementes nem sempre s\u00e3o facilmente removidas de cereais como sorgo, milho-mi\u00fado (millet) ou trigo-sarraceno, o que implica risco de contamina\u00e7\u00e3o nos alimentos derivados. \n\nOs <span style=\"color: #ff763f;\">alcaloides pirrolizid\u00ednicos (APs)<\/span> s\u00e3o tamb\u00e9m metabolitos secund\u00e1rios de defesa nas plantas. Podem atingir at\u00e9 19% do peso seco da planta e provocar diferentes graus de les\u00e3o hep\u00e1tica, desde necrose at\u00e9 doen\u00e7a veno-oclusiva. Al\u00e9m disso, a IARC classifica-os como \u201cpossivelmente carcinog\u00e9nicos para o ser humano\u201d (grupo 2B).  \n\n<span style=\"color: #ff763f;\">A toxina cereulida<\/span>, produzida por Bacillus cereus, representa outro risco alimentar. \u00c9 termoest\u00e1vel, n\u00e3o \u00e9 destru\u00edda pelo calor e acumula-se durante a fase estacion\u00e1ria de crescimento bacteriano.
