Dans ce cadre, le d\u00e9veloppement de nouveaux ingr\u00e9dients est propos\u00e9, tels que la cas\u00e9ine recombinante, les mati\u00e8res premi\u00e8res v\u00e9g\u00e9tales d\u00e9sodoris\u00e9es et les graisses structur\u00e9es, dont l\u2019application permettra de rapprocher les caract\u00e9ristiques nutritionnelles, sensorielles et technologiques des produits animaux de r\u00e9f\u00e9rence, lait, yaourt et fromage.<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\">\n<h2>Activit\u00e9s<\/h2>\n<ol>\n<li>Obtention de nouveaux ingr\u00e9dients avanc\u00e9s<\/li>\n<li>Processus de d\u00e9sodorisation des farines v\u00e9g\u00e9tales au moyen de la technologie d\u2019extraction supercritique<\/li>\n<li>G\u00e9n\u00e9ration de nouvelles structures analogues aux produits laitiers<\/li>\n<li>Objectivation de la perception sensorielle du produit ferment\u00e9 au moyen de l\u2019\u00e9valuation mol\u00e9culaire du produit et de sa relation avec les conditions du
