produits naturellement par des organismes vivants. Bien qu\u2019elles n\u2019affectent pas l\u2019organisme qui les g\u00e9n\u00e8re, elles peuvent \u00eatre nuisibles \u00e0 la sant\u00e9 des animaux et des personnes lorsqu\u2019elles sont ing\u00e9r\u00e9es par le biais des aliments. Leur diversit\u00e9 chimique implique des diff\u00e9rences en termes de fonction biologique et de degr\u00e9 de toxicit\u00e9, ce qui fait de leur surveillance un aspect essentiel de la s\u00e9curit\u00e9 alimentaire.  \n\nAu sein de notre portefeuille de services, se distinguent les <span style=\"color: #ff763f;\">mycotoxines, les toxines des plantes (alcalo\u00efdes tropaniques et pyrrolizidiniques) et d\u2019autres toxines (toxine c\u00e9r\u00e9ulide).<\/span>\n\nLes mycotoxines sont des compos\u00e9s chimiques non anthropog\u00e9niques produits lors du m\u00e9tabolisme secondaire de champignons de genres tels que Aspergillus, Fusarium et Penicillium. Elles se trouvent dans des aliments non transform\u00e9s tels que les c\u00e9r\u00e9ales, les graines ol\u00e9agineuses, les fruits, les l\u00e9gumes, les fruits \u00e0 coque, les fruits s\u00e9ch\u00e9s, le caf\u00e9, le cacao et les \u00e9pices. Leurs graines ne sont pas toujours facilement \u00e9limin\u00e9es des c\u00e9r\u00e9ales comme le sorgho, le millet ou le sarrasin, ce qui implique un risque de contamination des aliments d\u00e9riv\u00e9s. \n\nLes <span style=\"color: #ff763f;\">alcalo\u00efdes pyrrolizidiniques (AP)<\/span> sont \u00e9galement des m\u00e9tabolites secondaires de d\u00e9fense chez les plantes. Ils peuvent repr\u00e9senter jusqu\u2019\u00e0 19 % du poids sec de la plante et provoquer diff\u00e9rents degr\u00e9s de l\u00e9sions h\u00e9patiques, allant de la n\u00e9crose \u00e0 la maladie veino-occlusive. De plus, le CIRC les classe comme possiblement canc\u00e9rog\u00e8nes pour l\u2019\u00eatre humain (groupe 2B).  \n\n<span style=\"color: #ff763f;\">La toxine c\u00e9r\u00e9ulide<\/span>, produite par Bacillus cereus, repr\u00e9sente un autre risque alimentaire. Elle est thermostable, n\u2019est pas d\u00e9truite par la chaleur et s\u2019accumule pendant la phase stationnaire de croissance bact\u00e9rienne. Son ingestion provoque une intoxication \u00e9m\u00e9tique, caract\u00e9ris\u00e9e par des naus\u00e9es aigu\u00ebs et des vomissements.  \n\nLa l\u00e9gislation europ\u00e9enne r\u00e9glemente la pr\u00e9sence de mycotoxines, d\u2019alcalo\u00efdes et de toxines bact\u00e9riennes.
