En el caso concreto del sector de la alimentaci\u00f3n funcional, las \u00f3micas han llegado para quedarse, y la prote\u00f3mica, esa gran desconocida, ha comenzado a adquirir el papel de protagonista, \u00bfquieres saber por qu\u00e9?<\/p>\n<p style=\"text-align: justify;\">Las prote\u00ednas a grandes rasgos est\u00e1n formadas por unidades m\u00e1s peque\u00f1as denominadas p\u00e9ptidos, y que a su vez est\u00e1n constituidos por mol\u00e9culas de menor tama\u00f1o que conocemos como amino\u00e1cidos. Diferentes composiciones de amino\u00e1cidos dan lugar a diferentes p\u00e9ptidos, que a su vez conforman distintas prote\u00ednas con una funci\u00f3n concreta.<\/p>\n\n<h3 style=\"text-align: justify;\"><strong>P\u00e9ptidos bioactivos como ingredientes en alimentaci\u00f3n funcional<\/strong><\/h3>\n<p style=\"text-align: justify;\">Sin embargo, de modo m\u00e1s reciente, se ha observado que algunos de estos p\u00e9ptidos, cuando son separados del conjunto total que forma la prote\u00edna, son capaces de adquirir ciertas bioactividades que acarrean un enorme potencial beneficioso para la salud humana. Entre estas bioactividades se pueden destacar antioxidantes, antibacterianas, antitumorales, antihipertensivas entre otras.<\/p>\n<p style=\"text-align: justify;\">Por tanto, no pasa desapercibido en el terreno de la alimentaci\u00f3n funcional la exploraci\u00f3n de nuevas fuentes proteicas con la finalidad de buscar en su interior y hallar p\u00e9ptidos bioactivos. En este contexto, es donde la prote\u00f3mica adquiere un papel muy relevante, ya que a trav\u00e9s de ella podemos:<\/p>\n\n<ol>\n \t<li><strong>Identificar las prote\u00ednas presentes en una matriz<\/strong><\/li>\n \t<li><strong>Caracterizar y cuantificar los p\u00e9ptidos<\/strong>: Una vez conocemos esta informaci\u00f3n, utilizando diferentes herramientas prote\u00f3micas podemos caracterizar y cuantificar los p\u00e9ptidos que contienen, as\u00ed como explorar su potencial bioactivo. Para caracterizar se estudia la secuencia del p\u00e9ptido en cuesti\u00f3n y se explora en bases de datos biol\u00f3gicas de p\u00e9ptidos bioactivos. Tambi\u00e9n se pueden hacer ensayos funcionales de los p\u00e9ptidos en cultivos celulares para estudiar su bioactividad potencial.<\/li>\n \t<li><strong>Definir los procesos que permiten extraer ese potencial<\/strong>: Y un paso m\u00e1s all\u00e1: es la base para definir los procesos que permiten extraer ese potencial de la matriz en la que se encuentra. El proceso de extracci\u00f3n es hidr\u00f3lisis enzim\u00e1tica o por fermentaci\u00f3n bacteriana y comprobaci\u00f3n de la liberaci\u00f3n de esos p\u00e9ptidos mediante peptid\u00f3mica dirigida.<\/li>\n<\/ol>\n<h3 style=\"text-align: justify;\"><strong>Incorporaci\u00f3n de p\u00e9ptidos bioactivos de para incrementar el valor de los productos<\/strong><\/h3>\n<p style=\"text-align: justify;\">De manera que cada vez m\u00e1s empresas apuestan por explorar esta posibilidad para poder incorporar a sus matrices p\u00e9ptidos bioactivos, incrementando as\u00ed el valor de sus productos. Desde hace a\u00f1os se pueden encontrar en los mercados productos en esta l\u00ednea, como los hidrolizados de col\u00e1geno o case\u00edna. No solo en este sector, tambi\u00e9n en cosm\u00e9tica, alimentaci\u00f3n animal, bebidas para deportistas, etc., se pueden encontrar f\u00f3rmulas a base de p\u00e9ptidos bioactivos, y la prote\u00f3mica es la herramienta m\u00e1s poderosa y eficiente para llegar a ese punto.<\/p>\n<p style=\"text-align: justify;\"><strong>Ejemplos de tecnolog\u00edas de p\u00e9ptidos recientemente lanzadas al mercado:<\/strong><\/p>\n\n<ul style=\"text-align: justify;\">\n \t<li><strong>Tecnolog\u00eda de salud del tejido conectivo:<\/strong> P\u00e9ptidos de col\u00e1geno bioactivos para mejorar la movilidad y reducir las posibles lesiones en las articulaciones al mejorar el bienestar de los cart\u00edlagos, tendones y ligamentos de los atletas.<\/li>\n \t<li><strong>Tecnolog\u00eda de salud \u00f3sea:<\/strong> P\u00e9ptidos de col\u00e1geno aglomerado producidos a partir de bovinos de alta calidad, son ultrabioactivos y ofrecen una mejor dispersabilidad y solubilidad.<\/li>\n \t<li><strong>Tecnolog\u00eda de inflamaci\u00f3n tras la realizaci\u00f3n del ejercicio:<\/strong> P\u00e9ptidos de origen vegetal que est\u00e1n cient\u00edficamente probados para apoyar la recuperaci\u00f3n del da\u00f1o muscular y la inflamaci\u00f3n producidos por el ejercicio.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Si tu empresa desarrolla alimentos funcionales, te podemos ayudar a incrementar su valor.
