No s\u00f3lo el aumento del precio en s\u00ed, sino tambi\u00e9n la dificultad en la previsi\u00f3n a medio plazo de estos precios. Esto influye directamente en los costes de proceso y, generalmente no se puede trasladar el sobrecoste al precio del producto final de manera directa. La selecci\u00f3n de tecnolog\u00edas es clave en este proceso. Te contamos un caso concreto de reducci\u00f3n de coste energ\u00e9tico, en los procesos de deshidrataci\u00f3n de productos, a trav\u00e9s de la tecnolog\u00eda de secado por atomizaci\u00f3n.\n\nEn el momento de la selecci\u00f3n de tecnolog\u00edas y de dise\u00f1o de equipos e instalaciones industriales para fabricar un determinado producto, se tienen en cuenta estimaciones sobre los precios de cada tipo de energ\u00eda, de los materiales de fabricaci\u00f3n, de las materias primas, del suelo, etc\u0085 y, en funci\u00f3n de estas consideraciones se seleccionan unas tecnolog\u00edas u otras. Como ocurre a veces con los electrodom\u00e9sticos en casa o con los medios de transporte, a veces hay alternativas, algunos equipos son m\u00e1s econ\u00f3micos, otros tienen precios m\u00e1s elevados, pero consumen menos, o son m\u00e1s aut\u00f3nomos, ocupan menos espacio, etc\u0085\n\nDesde nuestra experiencia en procesos de estabilizaci\u00f3n de microorganismos os contamos un ejemplo de tecnolog\u00eda de deshidrataci\u00f3n de menor coste energ\u00e9tico para productos secos en polvo destinados a alimentaci\u00f3n animal o para aplicaciones agr\u00edcolas.\n<h2><strong>Tecnolog\u00eda de spray drying o secado por atomizaci\u00f3n como alternativa a la liofilizaci\u00f3n <\/strong><\/h2>\nEs el caso de la tecnolog\u00eda de <em>spray drying<\/em> o secado por atomizaci\u00f3n como alternativa a la liofilizaci\u00f3n para estabilizar microorganismos como producto seco en polvo. Como los microorganismos son sensibles, cuando se pretende mantener su viabilidad, tradicionalmente se utiliza la liofilizaci\u00f3n, puesto que es una tecnolog\u00eda de deshidrataci\u00f3n que no precisa temperatura.\n\nEn el caso de microrganismos probi\u00f3ticos para alimentaci\u00f3n, suplementos nutricionales, bacterias y levaduras, cultivos iniciadores para fermentaci\u00f3n, generalmente es la primera opci\u00f3n a tener en cuenta. Pero cada vez hay m\u00e1s aplicaciones en las que el precio del producto final es muy relevante para la viabilidad del producto, como microorganismos probi\u00f3ticos y microalgas para alimentaci\u00f3n animal o microorganismos para aplicaciones agr\u00edcolas como agentes de biocontrol, por lo que es necesario tener en cuenta otras posibles tecnolog\u00edas de menor coste energ\u00e9tico.\n<h2><strong>Las 5 ventajas del secado por atomizaci\u00f3n para la deshidrataci\u00f3n de productos<\/strong><\/h2>\nLa tecnolog\u00eda de secado por atomizaci\u00f3n para la estabilizaci\u00f3n de microorganismos manteniendo su viabilidad y estabilidad en el tiempo presenta varias ventajas:\n<ul>\n \t<li><strong>Menor consumo energ\u00e9tico:<\/strong> la primera de ellas es un menor consumo energ\u00e9tico respecto a la liofilizaci\u00f3n. El proceso de liofilizaci\u00f3n es alrededor de hasta seis veces m\u00e1s caro por Kg de agua eliminada que el proceso de secado por atomizaci\u00f3n.<\/li>\n \t<li><strong>Necesita un equipamiento industrial m\u00e1s econ\u00f3mico:<\/strong> Los equipos industriales necesarios para el secado por atomizaci\u00f3n son tambi\u00e9n m\u00e1s baratos que los equipos de liofilizaci\u00f3n, para un mismo volumen productivo.<\/li>\n \t<li><strong>Se obtiene un producto en polvo de f\u00e1cil manejo<\/strong>: Adem\u00e1s, el producto que se obtiene es un polvo, de f\u00e1cil manejo, fluido, y de sencilla dosificaci\u00f3n, frente a las \u0093tortas\u0094 que se obtienen generalmente por liofilizaci\u00f3n, que requieren una manipulaci\u00f3n extra.<\/li>\n \t<li><strong>Permite el manejo de grandes vol\u00famenes de producci\u00f3n:<\/strong> Por otro lado, el secado por atomizaci\u00f3n es un proceso continuo, frente a la liofilizaci\u00f3n que se trabaja habitualmente en discontinuo, en procesos por lotes. Al tratarse de un proceso continuo, se puede manejar en grandes vol\u00famenes de producci\u00f3n, acoplado a un proceso biotecnol\u00f3gico de cultivo del microorganismo.<\/li>\n \t<li><strong>Permite aportar propiedades mejoradas al producto final:<\/strong> Por \u00faltimo, en el propio proceso de secado por atomizaci\u00f3n, se puede combinar con la microencapsulaci\u00f3n del microorganismo, lo que permite aportar propiedades mejoradas, como:\n<ul>\n \t<li>una mayor protecci\u00f3n frente a temperatura u oxidaci\u00f3n<\/li>\n \t<li>una liberaci\u00f3n controlada en unas condiciones concretas (por ejemplo, de ph para liberaci\u00f3n en el colon)<\/li>\n \t<li>una reducci\u00f3n del impacto de olor y sabor, o una mayor estabilidad en el tiempo.<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h2><strong>La selecci\u00f3n de las variables de proceso, aspecto cr\u00edtico en las etapas iniciales <\/strong><\/h2>\nComo contrapartida, el proceso de secado por atomizaci\u00f3n no deja de ser un proceso t\u00e9rmico, lo que podr\u00eda llegar a da\u00f1ar las c\u00e9lulas y causar la p\u00e9rdida de viabilidad, as\u00ed que la selecci\u00f3n de las variables de proceso resulta un aspecto cr\u00edtico en las etapas iniciales del desarrollo. Adem\u00e1s, el secado por atomizaci\u00f3n tiene muchas variables de proceso, con efectos muy interrelacionados. Esto hace que el ajuste inicial del proceso sea complejo. No obstante, una vez definidas estas variables, el proceso es escalable a nivel industrial a grandes vol\u00famenes de producci\u00f3n.\n\n<strong>Desarrollo de procesos<\/strong> <strong>de estabilizaci\u00f3n de microorganismos mediante secado por atomizaci\u00f3n desde escala de laboratorio hasta escala piloto <\/strong>\n\nEn AINIA contamos con experiencia y equipamiento para el desarrollo de estos procesos de estabilizaci\u00f3n de microorganismos mediante secado por atomizaci\u00f3n desde escala de laboratorio hasta escala piloto y producci\u00f3n.
