Los m\u00e9todos anal\u00edticos son fundamentales para garantizar la ausencia de potenciales peligros para los consumidores. <em>Listeria monocytogenes<\/em> es una de las bacterias que centra los mayores esfuerzos de la industria. En AINIA estamos trabajando en el desarrollo para una soluci\u00f3n para la detecci\u00f3n de Listeria que supere las limitaciones de los m\u00e9todos anal\u00edticos convencionales. Te lo contamos.\n\nLas enfermedades de transmisi\u00f3n alimentaria tienen un impacto enorme en la salud de la poblaci\u00f3n y en la econom\u00eda de los pa\u00edses: 600 millones de casos de enfermedades, 420.000 muertes y m\u00e1s de 95.000 millones de d\u00f3lares en p\u00e9rdida de productividad anualmente, seg\u00fan estimaciones de la Organizaci\u00f3n de las Naciones Unidas. As\u00ed pues, asegurar la inocuidad alimentaria es una prioridad para el sector alimentario en general y para los operadores en particular. En este sentido, los m\u00e9todos anal\u00edticos son fundamentales para garantizar la ausencia de potenciales peligros para los consumidores &#8211; tales como determinados virus, bacterias y compuestos qu\u00edmicos \u0096 en el menor tiempo posible, especialmente en el caso de los alimentos de corta vida \u00fatil.\n<h3><strong><em>Listeria monocytogenes<\/em><\/strong><strong> en alimentos listos para el consumo<\/strong><\/h3>\n<p style=\"text-align: justify;\">Se trata de la especie del g\u00e9nero <em>Listeria<\/em> causante de la listeriosis en los seres humanos y en los animales. Esta infecci\u00f3n es poco frecuente, pero presenta altas tasas de hospitalizaci\u00f3n y letalidad. La principal v\u00eda de transmisi\u00f3n de esta enfermedad es el consumo de alimentos o piensos contaminados.<\/p>\nLa bacteria puede encontrarse naturalmente en algunos productos frescos y tambi\u00e9n puede llegar a otros alimentos m\u00ednimamente procesados a trav\u00e9s de una contaminaci\u00f3n cruzada. Este fen\u00f3meno se produce debido a que <em>L. monocytogenes<\/em>, una vez ha entrado en una instalaci\u00f3n alimentaria, puede crecer en condiciones adversas (temperaturas de refrigeraci\u00f3n) y en diversas zonas (suelo, sumideros y superficies en contacto con los alimentos) desde las que es capaz de pasar a los alimentos.\n<h3><strong>Experiencia en biosensores para la detecci\u00f3n de contaminantes<\/strong><\/h3>\n&lt;p&#8221;&gt;Con el objetivo de ofrecer soluciones a la industria que permitan reducir los tiempos de espera de los resultados de los an\u00e1lisis, tanto de<em> L. monocytogenes<\/em> como de otros contaminantes qu\u00edmicos o microbiol\u00f3gicos, AINIA lleva trabajando m\u00e1s de 10 a\u00f1os en la tecnolog\u00eda de biosensores.\n\nLos biosensores son dispositivos que utilizan enzimas, anticuerpos, tejidos o c\u00e9lulas aislados para detectar compuestos qu\u00edmicos generalmente por medio de se\u00f1ales el\u00e9ctricas, t\u00e9rmicas u \u00f3pticas. Algunos ejemplos de aplicaciones relacionadas con el control de la calidad y la inocuidad en la industria agroalimentaria ser\u00edan: el control de procesos (p. ej., fermentaci\u00f3n o pasteurizaci\u00f3n) y el an\u00e1lisis de la composici\u00f3n (p. ej., porcentaje de alcohol o az\u00facares), de la vida \u00fatil (p. ej., aminas bi\u00f3genas) o de la contaminaci\u00f3n (p. ej., plaguicidas o microbios).\n\nCabe destacar la participaci\u00f3n de AINIA en diversos consorcios nacionales y europeos para el desarrollo de inmunosensores (o biosensores inmunol\u00f3gicos) \u00f3pticos para diferentes aplicaciones, tales como la <a href=\"https:\/\/www.ainia.com\/ainia-news\/biosensores-para-la-deteccion-rapida-de-plaguicidas-en-citricos\/\">detecci\u00f3n de plaguicidas en c\u00edtricos<\/a> (SABIO) y la detecci\u00f3n de <em>L.<\/em><em>monocytogenes<\/em> en muestras ambientales<a href=\"http:\/\/www.biolisme.eu\/bases\/biolisme.nsf\/webContents\/Bienvenidos\"> (BIOLISME)<\/a>. En ambos casos, los m\u00e9todos anal\u00edticos convencionales \u0096 cromatogr\u00e1ficos o basados en cultivos o ensayos inmunol\u00f3gicos \u0096, requieren de equipamiento y personal cualificado capaz, bien de realizar ensayos laboriosos, bien de manejar instrumentaci\u00f3n sofisticada. Las principales ventajas que ofrecen los inmunosensores \u00f3pticos son su elevada sensibilidad, especificidad y rapidez.\n<h3><strong>Tecnolog\u00eda de AWSensors para la detecci\u00f3n de <em>Listeria monocytogenes<\/em> en alimentos<\/strong><\/h3>\nRecientemente, desde AINIA hemos apostado por la tecnolog\u00eda de microbalanza de cristal de cuarzo con medida de la disipaci\u00f3n (QCM-D, por sus siglas en ingl\u00e9s) de la empresa valenciana Advanced Wave Sensors (AWSensors) para abordar la detecci\u00f3n de contaminantes en alimentos.\n<p style=\"text-align: justify;\">La tecnolog\u00eda QCM-D est\u00e1 basada en el uso de un resonador piezoel\u00e9ctrico como un sensor para el estudio de interacciones en su superficie.
