Uno de los avances m\u00e1s prometedores en este campo es el desarrollo de carne cultivada <em>in vitro<\/em>, una tecnolog\u00eda revolucionaria que tiene el potencial de transformar la industria alimentaria tal como la conocemos. En AINIA estamos trabajando en esta l\u00ednea para llevar a cabo una producci\u00f3n de carne cultivada de manera eficiente y sostenible. Te lo contamos.<\/p>\n<p>Dentro del \u00e1mbito de la carne cultivada <em>in vitro<\/em>, en AINIA estamos trabajando en un proyecto innovador denominado SMARTFARM. En este proyecto multidisciplinario, estamos abordando diversas \u00e1reas clave para llevar a cabo la producci\u00f3n de carne cultivada de manera eficiente y sostenible.<\/p>\n<p>Uno de los pilares fundamentales de este proyecto es el establecimiento de cultivos primarios y l\u00edneas celulares de vacuno a partir de biopsias animales. Esta fase implica la extracci\u00f3n y cultivo de c\u00e9lulas animales, con un enfoque espec\u00edfico en el tejido muscular y adiposo (grasa). Estas c\u00e9lulas servir\u00e1n como la base para la producci\u00f3n de carne cultivada.<\/p>\n<h3><strong>Desaf\u00edos en la producci\u00f3n de carne cultivada <em>in vitro<\/em><\/strong><\/h3>\n<p>La tecnolog\u00eda de bioimpresi\u00f3n 3D desempe\u00f1a un papel crucial en este proyecto al permitir la recreaci\u00f3n de las formas ideales de los productos c\u00e1rnicos. A trav\u00e9s de la impresi\u00f3n 3D con carne cultivada, es posible lograr la textura y estructura deseada de la carne, proporcionando una experiencia culinaria aut\u00e9ntica y satisfactoria.<\/p>\n<ul>\n<li><strong>Escalado de la producci\u00f3n:<\/strong> El escalado de la producci\u00f3n es otro aspecto vital para la viabilidad de la carne cultivada <em>in vitro<\/em> a gran escala. La implementaci\u00f3n de biorreactores permite aumentar la producci\u00f3n de carne cultivada de manera eficiente, controlada y reproducible. Esto allana el camino para satisfacer la demanda creciente de alternativas de carne sostenible en el mercado.<\/li>\n<li><strong>Alternativas al suero bovino fetal: <\/strong>Por \u00faltimo, un desaf\u00edo importante en la producci\u00f3n de carne cultivada es encontrar alternativas al suero bovino fetal utilizado com\u00fanmente. En este proyecto, se busca la expresi\u00f3n de factores de crecimiento ya que su incorporaci\u00f3n en el medio de cultivo es esencial para reemplazar el suero bovino fetal, permitiendo no solo una producci\u00f3n m\u00e1s \u00e9tica y sostenible de carne cultivada, sino tambi\u00e9n garantizando el crecimiento y desarrollo \u00f3ptimo de las c\u00e9lulas, alineando as\u00ed la tecnolog\u00eda con los principios de bienestar animal y producci\u00f3n alimentaria responsable.<\/li>\n<\/ul>\n<h3><strong><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-medium wp-image-165218\" src=\"https:\/\/ainia.endesarrollo.pro\/wp-content\/uploads\/MicrosoftTeams-image-72-225x300.png\" alt=\"carne cultivada in vitro\" width=\"225\" height=\"300\" \/>\u00a0<\/strong><\/h3>\n<h3><strong>Beneficios de la carne cultivada i<em>n vitro<\/em><\/strong><\/h3>\n<p>Dentro del proyecto SMARTFARM en el que buscamos desarrollar carne cultivada <em>in vitro<\/em>, se vislumbran beneficios que pueden transformar la industria alimentaria y contribuir a un futuro sostenible y \u00e9tico:<\/p>\n<ul>\n<li><strong>Reduce las emisiones de gases de efecto invernadero:<\/strong> Esta alternativa reduce de manera significativa la necesidad de tierra, agua y emisiones de gases de efecto invernadero en comparaci\u00f3n con la producci\u00f3n tradicional de carne.<\/li>\n<li><strong>Promueve el bienestar animal:<\/strong> Este enfoque innovador tambi\u00e9n promueve el bienestar animal al eliminar la cr\u00eda y sacrificio de animales, respondiendo a preocupaciones \u00e9ticas y fomentando un sistema alimentario m\u00e1s compasivo.<\/li>\n<li><strong>Disminuye el riesgo de enfermedades transmitidas por alimentos:<\/strong> Adem\u00e1s, al producirse en ambientes controlados y sanitarios, disminuye considerablemente el riesgo de enfermedades transmitidas por alimentos, garantizando as\u00ed una alimentaci\u00f3n m\u00e1s segura y saludable para la poblaci\u00f3n.<\/li>\n<\/ul>\n<p>Estos beneficios amalgamados sit\u00faan a la carne cultivada <em>in vitro<\/em> en la vanguardia de las soluciones que pueden mejorar nuestro mundo y cambiar la forma en que percibimos y consumimos carne. Estamos en el umbral de un cambio trascendental hacia un <strong>futuro alimentario m\u00e1s consciente y responsable<\/strong>.<\/p>\n<h3><strong>Regulaci\u00f3n<\/strong>: <strong>Hacia la aprobaci\u00f3n de la carne cultivada como Novel Food<\/strong><\/h3>\n<p>Es importante mencionar que uno de los desaf\u00edos y requisitos clave para la comercializaci\u00f3n exitosa de la carne cultivada <em>in vitro <\/em>es la obtenci\u00f3n de la aprobaci\u00f3n como Novel Food. La evaluaci\u00f3n y aprobaci\u00f3n de Novel Food son cruciales para garantizar la seguridad alimentaria y la conformidad con los est\u00e1ndares de calidad antes de que la carne cultivada pueda ser comercializada en la UE.<\/p>\n<p>Este proceso riguroso permite a las autoridades evaluar los posibles riesgos para la salud y proporciona a los consumidores la confianza de que los alimentos novedosos cumplen con los criterios establecidos antes de su introducci\u00f3n en el mercado. En este sentido, Singapur ha marcado un hito al aprobar la venta de carne cultivada <em>in vitro<\/em>, estableciendo un precedente en la adopci\u00f3n de esta innovaci\u00f3n y allanando el camino para su aceptaci\u00f3n global.<\/p>\n<h3><strong>Carne cultivada <em>in vitro<\/em>, alternativa alimentaria sostenible<\/strong><\/h3>\n<p>En este contexto, desde AINIA, estamos comprometidos con garantizar la seguridad y la viabilidad de la carne cultivada <em>in vitro<\/em> como alternativa alimentaria sostenible. Tras el doctorado, realiz\u00f3 un primer posdoctorado en B\u00e9lgica en el VIB (Plant Systems Biology, Universidad de Gante), financiado mediante una beca posdoctoral FWO belga competitiva, donde trabaj\u00f3 en ingenier\u00eda gen\u00e9tica de plantas y en el desarrollo de vacunas orales. Posteriormente, obtuvo una beca Marie Sk\u0142odowska-Curie de la Comisi\u00f3n Europea, con la que continu\u00f3 su etapa posdoctoral enfoc\u00e1ndose en el dise\u00f1o de anticuerpos y su producci\u00f3n en plataformas vegetales como complemento alimentario para nutrici\u00f3n animal. Despu\u00e9s de una etapa en Grimstad (sur de Noruega) por motivos de reunificaci\u00f3n familiar, regres\u00f3 a Valencia para incorporarse al CSIC como investigadora posdoctoral, donde trabaj\u00f3 en edici\u00f3n gen\u00e9tica de plantas. Tras su etapa acad\u00e9mica, se incorpor\u00f3 a AINIA, en el departamento de Microbiolog\u00eda y Biotecnolog\u00eda Industrial, donde particip\u00f3 activamente en la creaci\u00f3n y consolidaci\u00f3n del laboratorio de biolog\u00eda molecular e ingenier\u00eda gen\u00e9tica, contribuyendo al impulso estrat\u00e9gico de esta l\u00ednea dentro del centro. Despu\u00e9s de cinco a\u00f1os en este departamento, pas\u00f3 a formar parte de la Unidad de Innovaci\u00f3n, donde actualmente ejerce como l\u00edder y gestora de proyectos europeos, con un fuerte enfoque en biotecnolog\u00eda, transferencia de tecnolog\u00eda e innovaci\u00f3n Su tesis doctoral se centr\u00f3 en la producci\u00f3n de anticuerpos en plataformas vegetales para aplicaciones de inmunoterapia oral pasiva, combinando biotecnolog\u00eda vegetal, expresi\u00f3n recombinante y aplicaciones biom\u00e9dicas. Tras el doctorado, realiz\u00f3 un primer posdoctorado en B\u00e9lgica en el VIB (Plant Systems Biology, Universidad de Gante), financiado mediante una beca posdoctoral FWO belga competitiva, donde trabaj\u00f3 en ingenier\u00eda gen\u00e9tica de plantas y en el desarrollo de vacunas orales. Posteriormente, obtuvo una beca Marie Sk\u0142odowska-Curie de la Comisi\u00f3n Europea, con la que continu\u00f3 su etapa posdoctoral enfoc\u00e1ndose en el dise\u00f1o de anticuerpos y su producci\u00f3n en plataformas vegetales como complemento alimentario para nutrici\u00f3n animal. Despu\u00e9s de una etapa en Grimstad (sur de Noruega) por motivos de reunificaci\u00f3n familiar, regres\u00f3 a Valencia para incorporarse al CSIC como investigadora posdoctoral, donde trabaj\u00f3 en edici\u00f3n gen\u00e9tica de plantas. Tras su etapa acad\u00e9mica, se incorpor\u00f3 a AINIA, en el departamento de Microbiolog\u00eda y Biotecnolog\u00eda Industrial, donde particip\u00f3 activamente en la creaci\u00f3n y consolidaci\u00f3n del laboratorio de biolog\u00eda molecular e ingenier\u00eda gen\u00e9tica, contribuyendo al impulso estrat\u00e9gico de esta l\u00ednea dentro del centro.
