El proyecto BOIL\u00c0 se centra en investigar <strong>alternativas<\/strong><b> tecnol\u00f3gicas capaces de asemejar las propiedades sensoriales y tecnol\u00f3gicas de las grasas animales<\/b>, con un enfoque m\u00e1s sostenible y saludable. Para ello, se exploran m\u00e9todos avanzados de extracci\u00f3n de aceite (oleosomas) a partir de materias primas vegetales como <b>semillas de uva, semillas de calabaza, frutos secos y subproductos agr\u00edcolas<\/b>. Estos procesos emplean t\u00e9cnicas innovadoras como el prensado a baja temperatura, ultrasonidos, procesos electroqu\u00edmicos o tecnolog\u00edas de separaci\u00f3n con membranas.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-family: 'Calibri',sans-serif;\">Otra de las l\u00edneas de investigaci\u00f3n se basa en la oleogelaci\u00f3n proteica, un proceso mediante el cual los aceites l\u00edquidos (como los de girasol, oliva o colza) se transforman en estructuras s\u00f3lidas o semis\u00f3lidas aplicando ingredientes proteicos para su estabilizaci\u00f3n. De este modo, se pueden alcanzar propiedades tecnol\u00f3gicas y sensoriales muy pr\u00f3ximas a las grasas saturadas, como las de origen animal o vegetal s\u00f3lido (palma o coco), para facilitar as\u00ed su incorporaci\u00f3n en alimentos que requieran texturas y consistencias m\u00e1s s\u00f3lidas, pero con un perfil nutricional m\u00e1s saludable.<\/span><\/p>\n\n<h2 style=\"text-align: justify;\"><b><span style=\"font-family: 'Calibri',sans-serif;\">Innovaciones biotecnol\u00f3gicas para reducir el impacto ambiental<\/span><\/b><\/h2>\n<p style=\"text-align: justify;\"><span style=\"font-family: 'Calibri',sans-serif;\">BOIL\u00c0 incorpora tambi\u00e9n estrategias biotecnol\u00f3gicas para producir l\u00edpidos mediante microorganismos (bacterias y levaduras) y aceites vegetales cultivados in vitro. Estas innovaciones permitir\u00e1n <a href=\"https:\/\/www.ainia.com\/ainia-news\/avances-retos-sector-alimentos-origen-vegetal\/\" target=\"_blank\" rel=\"noopener\">generar alternativas sostenibles a las grasas animales y vegetales tradicionales<\/a>, minimizando el impacto ambiental y optimizando el uso de recursos.<\/span><\/p>\n<p style=\"margin: 0cm; text-align: justify;\"><span style=\"font-family: 'Calibri',sans-serif;\">El objetivo final del proyecto es proporcionar soluciones que no solo mejoren la calidad sensorial y nutricional de los alimentos plant-based, sino que tambi\u00e9n contribuyan a una cadena de suministro m\u00e1s sostenible.
