El nitr\u00f3geno, que se encuentra a \u0096196\u00baC, cuando se calienta a temperatura ambiente, pasa de l\u00edquido a gas ocupando unas 700 veces su volumen original, expandi\u00e9ndose r\u00e1pidamente y barriendo el aire presente en el envase. Inmediatamente se cierra el envase, quedando una atm\u00f3sfera de nitr\u00f3geno-gas en su interior.<\/span><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-family: Verdana; font-size: small;\">Las principales ventajas de la utilizaci\u00f3n de nitr\u00f3geno l\u00edquido en el envasado de alimentos son dos:<\/span><br><span style=\"font-family: Verdana; font-size: small;\">&#8211;\u00a0<\/span><span style=\"font-family: Verdana; font-size: small;\">La presi\u00f3n interior resultante de la expansi\u00f3n del nitr\u00f3geno a\u00f1ade resistencia a los envases de paredes delgadas, con lo que se producen menos deformaciones y roturas durante su transporte y distribuci\u00f3n. Se usa tambi\u00e9n para evitar el rechupe de envases en los que el producto se envasa en caliente o a una presi\u00f3n reducida.<\/span><br><span style=\"font-family: Verdana; font-size: small;\">&#8211;\u00a0<\/span><span style=\"font-family: Verdana; font-size: small;\">Gracias al barrido del aire del interior del envase, se reduce ampliamente el contenido en ox\u00edgeno del espacio de cabeza, lo que supone una protecci\u00f3n para los productos que sufren reacciones degenerativas con el ox\u00edgeno, como enranciamientos.<\/span><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"font-family: Verdana; font-size: small;\">Como puntos negativos, puede destacarse que, el nitr\u00f3geno l\u00edquido dosificado se encuentra a una temperatura muy baja, con lo que la porci\u00f3n de producto que entra en contacto directo con la gota l\u00edquida puede sufrir quemaduras por enfriamiento.
