{"id":61039,"date":"2014-12-03T14:26:38","date_gmt":"2014-12-03T14:26:38","guid":{"rendered":"https:\/\/ainia.endesarrollo.pro\/ainia-logra-la-acreditacion-enac-para-certificar-el-aceite-de-oliva-virgen-segun-calidad-sensorial\/"},"modified":"2026-05-26T15:08:56","modified_gmt":"2026-05-26T15:08:56","slug":"ainia-logra-la-acreditacion-enac-para-certificar-el-aceite-de-oliva-virgen-segun-calidad-sensorial","status":"publish","type":"post","link":"https:\/\/ainia.endesarrollo.pro\/en\/notas-de-prensa\/ainia-logra-la-acreditacion-enac-para-certificar-el-aceite-de-oliva-virgen-segun-calidad-sensorial\/","title":{"rendered":"AINIA logra la acreditaci\u00f3n ENAC para certificar el aceite de oliva virgen seg\u00fan calidad sensorial"},"content":{"rendered":"\n<img fetchpriority=\"high\" decoding=\"async\" style=\"margin-right: 10px;\" src=\"https:\/\/ainia.endesarrollo.pro\/wp-content\/uploads\/Panel_aceite_de_oliva_consumolab.jpg\" alt=\"\" width=\"285\" height=\"194\" align=\"left\" \/>\n<p style=\"text-align: justify;\">El centro especializado en an\u00e1lisis sensorial de alimentos, CONSUMOLAB, perteneciente a AINIA CENTRO TECNOL\u00d3GICO, acaba de ser acreditado por la Entidad Nacional de Acreditaci\u00f3n (ENAC) para certificar la categor\u00eda del aceite de oliva virgen seg\u00fan su calidad sensorial, asegurando que los aceites analizados cumplen con los par\u00e1metros organol\u00e9pticos que se definen en la reglamentaci\u00f3n.\n<\/p>\n<p style=\"text-align: justify;\"><strong>AINIA se encuentra capacitada, con m\u00e9todos de an\u00e1lisis sensorial homologados en la Comunidad Europea, para evaluar las caracter\u00edsticas organol\u00e9pticas y clasificar en funci\u00f3n de estas el aceite de oliva virgen en sus tres categor\u00edas: Virgen Extra, Virgen y Lampante<\/strong>, certificando as\u00ed que cumple con los requisitos establecidos en la legislaci\u00f3n comunitaria.<\/p>\n<p style=\"text-align: justify;\">Seg\u00fan establece ENAC, <strong>una de las caracter\u00edsticas m\u00e1s determinantes para la clasificaci\u00f3n del aceite de oliva virgen, requerida para su comercializaci\u00f3n (Virgen Extra, Virgen, Lampante) es su perfil organol\u00e9ptico,<\/strong> que se establece mediante un ensayo de evaluaci\u00f3n sensorial por un panel de catadores seleccionados y entrenados.<\/p>\n<p style=\"text-align: justify;\">Los paneles de catadores entrenados se encargan de medir determinadas caracter\u00edsticas de olor y sabor, mediante las cuales se valora y clasifica la calidad del aceite de oliva virgen. Entre los par\u00e1metros a evaluar se punt\u00faan atributos tales como sabor amargo y picante y olor y sabor frutado, avinado, rancio madera h\u00fameda,..etc.<\/p>\n<p style=\"text-align: justify;\"><strong>El panel de catadores de CONSUMOLAB <\/strong>(AINIA), certificado por ENAC, <strong>consta de 16 catadores entrenados <\/strong>durante m\u00e1s de un a\u00f1o para convertirse en expertos catadores de aceite de oliva virgen. Para la selecci\u00f3n se ha tenido en cuenta su sensibilidad olfato-gustativa, entre otros aspectos.<\/p>\n<p style=\"text-align: justify;\">AINIA, a trav\u00e9s de su centro CONSUMOLAB, da respuesta as\u00ed a las demandas del sector; una industria interesada y comprometida con la calidad de sus aceites que, sin embargo, cuenta con muy pocos paneles de expertos catadores acreditados privados que puedan certificar la calidad sensorial de los aceites de oliva y clasificarlos seg\u00fan sus caracter\u00edsticas organol\u00e9pticas.<\/p>\n<p style=\"text-align: justify;\"><strong>CONSUMOLAB, adem\u00e1s, se compromete a dar resultados de los ensayos de control que realice en un plazo inferior a una semana<\/strong>, frente a las dos semanas de media actuales de entidades de certificaci\u00f3n p\u00fablicas, a fin de que las empresas fabricantes puedan contar con esta informaci\u00f3n para liberar lotes de producto y proceder a su comercializaci\u00f3n con la mayor brevedad posible, dando as\u00ed respuesta a los condicionantes exigidos por las grandes distribuidoras y comercializadoras.<\/p>\n<p style=\"text-align: justify;\">En los \u00faltimos a\u00f1os el mercado del aceite de oliva ha experimentado un fuerte crecimiento. El reto del sector no es solo aumentar a\u00fan m\u00e1s su extraordinaria calidad, garantizando al consumidor un excelente producto con grandes posibilidades gastron\u00f3micas y saludables, sino que \u00e9sta sea reconocida y acreditada a trav\u00e9s de certificaciones correspondientes evitando fraudes.
