{"id":60663,"date":"2015-12-01T09:21:20","date_gmt":"2015-12-01T09:21:20","guid":{"rendered":"https:\/\/ainia.endesarrollo.pro\/nuevo-metodo-que-permite-clasificar-el-aceite-de-oliva-de-las-almazaras-de-manera-automatica\/"},"modified":"2026-05-26T15:04:32","modified_gmt":"2026-05-26T15:04:32","slug":"nuevo-metodo-que-permite-clasificar-el-aceite-de-oliva-de-las-almazaras-de-manera-automatica","status":"publish","type":"post","link":"https:\/\/ainia.endesarrollo.pro\/en\/notas-de-prensa\/nuevo-metodo-que-permite-clasificar-el-aceite-de-oliva-de-las-almazaras-de-manera-automatica\/","title":{"rendered":"Nuevo m\u00e9todo que permite clasificar el aceite de oliva de las almazaras de manera autom\u00e1tica"},"content":{"rendered":"\n<img fetchpriority=\"high\" decoding=\"async\" style=\"margin-right: 10px;\" src=\"https:\/\/ainia.endesarrollo.pro\/wp-content\/uploads\/recuepra2020_almazara_aceite.jpg\" alt=\"\" width=\"285\" height=\"194\" align=\"left\" \/>\n<h5><\/h5>\n<div style=\"text-align: justify;\">En el marco del <strong>proyecto Recupera 2020<\/strong>, promovido por el <strong>CSIC<\/strong>,\u00a0<strong>AINIA logra un <a href=\"https:\/\/www.ainia.com\/ainia-news\/tecnicas-rapidas-para-el-control-de-la-calidad-del-aceite-de-oliva-en-las-almazaras\/\" target=\"_blank\" rel=\"noopener\">n<\/a><a href=\"https:\/\/www.ainia.com\/ainia-news\/tecnicas-rapidas-para-el-control-de-la-calidad-del-aceite-de-oliva-en-las-almazaras\/\" target=\"_blank\" rel=\"noopener\">uevo m\u00e9todo que permite clasificar el aceite de oliva de las almazaras<\/a> de manera autom\u00e1tica y no invasiva<\/strong>.\u00a0Gracias a la aplicaci\u00f3n de tecnolog\u00edas de espectroscop\u00eda visible e infrarrojo cercano <strong>se puede diferenciar aceites de oliva virgen extra (AOVE), virgen y lampante <\/strong>en los controles rutinarios y en los procesos de recepci\u00f3n y de clasificaci\u00f3n de aceites <strong>dentro de la almazara<\/strong>.<\/div>\n<div><\/div>\n<div><\/div>\n<p style=\"text-align: justify;\"><strong>AINIA Centro Tecnol\u00f3gico<\/strong> ha desarrollado un nuevo m\u00e9todo que permite clasificar el aceite de oliva de manera r\u00e1pida y precisa mediante la aplicaci\u00f3n de <strong>tecnolog\u00edas innovadoras de espectroscop\u00eda \u00f3ptica (VIS\/NIR).<\/strong><\/p>\n\n<div>\n<div style=\"text-align: justify;\">Este m\u00e9todo permite obtener una <strong>huella espectral completa<\/strong>, de manera instant\u00e1nea, no invasiva y respetuosa con el medioambiente, de los principales atributos de calidad del aceite de oliva en el momento del proceso de clasificaci\u00f3n en la almazara.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">En concreto, se pueden conocer algunos de los <strong>indicadores de calidad generales<\/strong> como la acidez total o el \u00edndice de per\u00f3xidos <strong>y algunos minoritarios<\/strong>, \u00a0todos ellos responsables de las caracter\u00edsticas del aceite de oliva. Adem\u00e1s, se ha desarrollado un sistema de medida propio y nuevos modelos de calibraci\u00f3n para este tipo de \u00a0aceite.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">La aplicaci\u00f3n de estas t\u00e9cnicas, \u00a0que ha obtenido un alto nivel de precisi\u00f3n con muestras de aceite en almazara, tambi\u00e9n puede resultar de gran utilidad a los laboratorios de aceite de oliva que operan en las diferentes fases de la cadena de valor, desde la almazara hasta el control de calidad en la distribuci\u00f3n final.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Esta innovadora tecnolog\u00eda se enmarca en el <strong><a href=\"https:\/\/www.ainia.com\/ainia-news\/recupera2020:-desarrollamos-tecnicas-rapidas-para-el-control-calidad-aceite-de-oliva-en-almazaras\" target=\"_blank\" rel=\"noopener\">proyecto Recupera 2020<\/a><\/strong>, en el que <strong>AINIA Centro Tecnol\u00f3gico<\/strong> colabora con cerca de 40 grupos de investigaci\u00f3n pertenecientes a 9 centros del CSIC ubicados en Andaluc\u00eda.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<h5 class=\"subtitulo-naranja\">Una mejora para la competitividad del sector ole\u00edcola<\/h5>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">La clasificaci\u00f3n del aceite de oliva en funci\u00f3n de sus caracter\u00edsticas, requiere de una caracterizaci\u00f3n instant\u00e1nea para poder almacenar por separado las distintas clases de aceite de oliva, manteniendo su calidad, identidad y trazabilidad. Un error de clasificaci\u00f3n en el proceso de mezcla puede suponer importantes p\u00e9rdidas econ\u00f3micas y dificultades de maximizaci\u00f3n del rendimiento de las almazaras.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Un control exhaustivo del aceite de oliva s\u00f3lo es posible mediante sistemas anal\u00edticos que proporcionen informaci\u00f3n sobre el producto de manera inmediata y continua. Gracias a la aplicaci\u00f3n de esta nueva tecnolog\u00eda, las almazaras podr\u00edan emplear esta t\u00e9cnica para dirigir el aceite que reciben o que generan al tipo m\u00e1s adecuado de producto, seg\u00fan su calidad, de manera autom\u00e1tica y no invasiva.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<div style=\"text-align: justify;\">Por este motivo, el uso de sistemas anal\u00edticos automatizados que sean capaces de clasificar los aceites en los dep\u00f3sitos en funci\u00f3n de sus calidades de manera r\u00e1pida y que permitan, paralelamente, un control de su trazabilidad, resulta un avance de gran inter\u00e9s para el sector.<\/div>\n<div style=\"text-align: justify;\"><\/div>\n<p style=\"text-align:
